That is a great question! We had one as a child that did the same thing. He escaped from his cage before we ever figured it out!

Everyone that ever owned a hamster knows that they are escape experts.
The escape problem is not major around here.... :)
It is taming I need help with.

The biggest thing that we found was that you have to show them who is boss. They will bite-you put them down, so they learn, we don't like being picked up, we'll bite so we can go home!
You have to break that cycle. First up, understand why they bite initially. Its often fear-they need to feel secure. If they feel like you might drop them, they will bite so they can go away. If they feel threatened, they'll bite and run off. If you smell bad-you guessed it!!
You might want to wear some of the thick leather gardening gloves to hold them a few times. Do NOT put them back when they bite. They soon get to know who is boss.

Handle him more each day and he will soon be tame.
